My best friend of 16 years introduced me to this glorious restaurant. Short for “the establishment,” in over 15 years of operation est. has truly come to represent the gold standard for fine dining in Sydney. I love that it’s elegant in a not-too-fancy kind of way, and every bite was divine.

Located in the historic district known as The Rocks, est. occupies a sunny heritage dining room where soaring columns and epic crystal chandeliers make you want to arrive early and stay late—the ambiance is that good. The kitchen, headed by award-winning Executive Chef Peter Doyle, continues to lead the way in contemporary Australian cuisine with food that’s uncluttered, seasonally-driven, and completely scrumptious beyond belief.
